Lunch Please :)

This evening my family and I sat down to eat a delicious light meal and as I was devouring it I thought to myself: "Self, this would be a really great lunch item for a crowd." Not only are these Chicken Napoleon's really easy to throw together but everything can be prepared in advanced! Scrumptious can be simple yet delicious and these Napoleon's are definitely that.

Here's The Layout:

Avocado, Chicken, Tomato, Spinach, "Kick" Mayo and..

Puff Pastry! What could be better?

The Cayenne Pepper gives the Mayo a little kick without overwhelming it.

Here's the first bit of the assembly. The three layers of pastry make it a napoleon.

The finished stack...
I kept the puff pastry from 'puffing' by keeping
a second sheet pan on top during baking.

Watermelon is a great side with this dish
because it refreshes the pallet and balances out the cayenne in the mayo.

Hungry yet?

How bout now?

Isaac Was!
(Like the nice bruise between his eyes? Little boys are always scratched up)

This recipe is one of my favorites! It looks fancy but is super easy and a quick meal. It's light and flaky but fulfilling enough to get you through the day!

Spa Party Anyone?

Last night my mom and I hosted a BeautiControl Spa Party where we were pampered with relaxing techniques and wonderful lotions. By the time the party actually started I needed some relaxation time because of my whole day cooking experience! Actually I enjoyed the cooking but I enjoyed the eating even more :) I was looking to make "spa type food" and think I accomplished just that. Almost everything was gobbled
up very quickly and sharing my menu before hand was my hook, line, and sinker for my guests! Here's what we had:

Garlic, Italian, and Plain Crostini for dipping into Spinach Artichoke Dip
and Feta Basil Tomato Dip
Chocolate Covered Orange Peels

Chocolate Eclairs filled with Vanilla Custard

Raspberry Iced Tea

And here's what the table looked like. Sorry no close ups of the finished dips!

Of course when you host a spa party you get free gifts!
(this is one of the only times you will see me without make up on by the way)

Overall we were very happy with the outcome of the event and would recommend the BeautiControl products to anyone. It's really great stuff!

If you want any of the recipes shown above just email me and I'll get them sent out right away. Everything is super simple but packed full of flavor!
